Okay, so this one isn't a cake--but it's all edible and made of fondant/gumpaste.

It can be reproduced on a larger scale with the 'mushroom house' made of sculpted cake. This is a sculpture piece made in a class with Debbie Brown of England.

 

 

 

 

 

  

"Country Summer"

I made this cake for the Capital Confectioners' Cake and Sugar Art Show & Competition-- held in Austin at the Texas Culinary Academy (April 2006). 

It is my interpretation of a "still life"--in cake.  I love working with pottery (though my experiences have been limited), and thought this would be a perfect way to "hand-mold pottery,"  combining two passions!  The pitcher, bowl, sugar bowl, and lemons are all made of cake and covered with fondant.  The lemons looked so realistic, I caught myself doing a double take when they were sitting next to the real lemons I had used as models!  The knife and spoon are made of fondant, as well as the black-eyed susan.  The base is covered in marbled fondant, designed to look like a cutting board.  Even though this whole design concept took a lot of time, I really enjoyed it. 

When I arrived at the cake show, I was REALLY impressed with all the other cakes--they all looked fantastic.  I was excited to receive third place for my first competition!  --I also entered an Italian Cream Cake in the tasting contest, receiving first!

"Mr.Turkey"

This Holiday Turkey is made from chocolate pound cake

with a peanut butter filling.  It is hand-carved and covered with fondant,

molded, textured and air brushed for an aesthetic appearance. 

The Pilgrim and Santa hats are also carved from cake and

his winter scarf is made of fondant.  I had to convince people it was a cake!

 

 

 

 

 

 

 

 

I made this Jack-O-Lantern in a class taught by

Bronwen Weber and Aimee Olsen of Texas Culinary Academy.

We started with 9" cakes, carved them, covered with fondant,

hand-molded, and airbrushed.  The hat is made of carved cake also, and is covered with fondant and airbrushed.

"Cinderella's Castle"

This cake serves about 30 people.  It is a white cake iced in buttercream, with fondant turrets, stairway, and entrance.  It is all edible with the exception of the toothpicks used to suspend the fondant flags.  Royal icing drop flowers finish off the look.

This is a First Communion cake. The Shell and three drops of water serve as a reminder of Baptism, with the chalice, grapes, and loaf of bread representing the first communion.  The chalice is made of gum paste.  Both the bread and shell are hand carved cakes, covered with fondant and airbrushed.  Everything is edible. 

This is a fun way to dress up a traditional sheet cake.
